It comes from the Latin word “aperire” which means to open, and this alludes to the fact that aperitivo is a drink that one would consume before dinner, something with which you can have good conversation and awaken your palate before a meal.

Italy has long been the historic home for the aperitivo liqueur. The classic bitter Italian aperitivi include Campari, Aperol, Luxardo Bitter Bianco, and Martini & Rossi Bitter 1872. They are bitter, citrusy, and lower in alcohol than a straight spirit. That is not, however, the only kind—other aperitifs center flavors of citrus, herbs, or botanicals. The essence of this category of beverage is the infusion of flavors, whether those flavors are essentially Italian or from elsewhere.

When we decided to make our own American aperitivo, Terrativo Tennessee, we decided to approach it from a unique direction: using bourbon we distilled in Tennessee as the base with classic American flavors like rhubarb, cherry, bitter orange, and allspice infused into it.
