Notes on production: We wanted the focus to be on the rum itself and the botanicals to act more as a highlight of the molasses and yeast characteristics present. With that in mind, we looked to New Orleans’ history of cuisine and food culture for inspiration—bay leaf and pepper stood out. From there it was easy to identify what would balance out those deeper characteristics—orange peel and cardamom. Finally, in order to bring an overall structure and complexity to the spirit, we went with cherry bark which helped to round the spirit out into its complete form. A minuscule amount of sugar from the same source as the molasses, small enough to not necessitate listing on the label, is added to the finished rum to balance the more savory elements of the profile.
Notes on style: You haven’t tried anything quite like Lafcadio before—this isn’t even hyperbole. The savory, citrusy, herbaceous botanical blend paired with the character of the molasses rum that we made and macerated into is just wholly unique
