Macerations/infusions: Austrian elderflower and Italian lemon peel
Notes on production: We started Terrativo Nectar by producing a gin in the Austrian Alps, using Italian juniper, lemon peel, orange peel, as well as Austrian rosemary, ginger, nutmeg, and a number of other botanicals and spices. We then rested the gin for a year before macerating it with Austrian elderflower and more Italian lemon peel. After filtering it, we sweetened the mixture and brought down the proof to create a light, bright, refreshing elderflower and lemon aperitif with complexity and character from the gin spirit base.
Notes on style: Aperitifs have long been elusive to the American drinking public. Though they are low ABV and very refreshing and flavorful, the lack of understanding around their use and production have made them less popular. Here’s the important part: aperitifs are all about easy drinking. They already have the flavor, so simply add soda water, sparkling wine, or your favorite source of bubbles for an instant cocktail. And don’t forget the ice!
